Some of y’all probably know this already, but my mom’s side is 100% Greek so I can assure you this is authentic and approved! :) Such a nutritious option for a dip.
-1/2 of a large, unpeeled cucumber
-1 1/2 cups plain (full fat) Greek yogurt
-2 finely minced garlic cloves (or 1/4 tbsp garlic powder)
-2 tbsp olive oil
-1 tbsp fresh lemon juice
-1/2 tsp salt
-1 tbsp minced dill (or dill weed)
1. Grate the cucumber, then drain through a fine sieve for at least an hour (push all extra juice through with a spoon if you don’t have that much time).
2. Combine yogurt, garlic, olive oil, lemon juice, and salt in a bowl.
3. Add the grated cucumber and dill and stir.
4. Serve chilled!
